About the Recipe

This ultimate chilli bowl will keep you full for hours and is fibre rich for healthy digestion. Beetroot supports heart health whilst the pumpkin seeds give your magnesium levels a boost. This is the perfect balance of nutrients and flavour.

Ingredients

  • 2 cups of your delicious homemade chilli

  • 2 cups of mixed leafy greens

  • 1 medium roasted beetroot

  • 1/4 cup of crumbled feta cheese

  • 2 tbsp pumpkin seeds

  • 6-8 per person corn tortilla chips

  • 2 tbsp greek yogurt

  • Fresh herbs and chilli flakes

Preparation

Step 1


Warm up your chilli gently in a pan, once heated, arrange your fresh greens in your bowl.



Step 2


Add your warm chilli to one side of the bowl and place your sliced up beetroot alongside.



Step 3


Crumble your feta cheese over the greens and add a sprinkle of pumpkin seeds



Step 4


Add a good dollop of greek yogurt, serve with the tortilla chips on the side and finish with a sprinkle of chilli flakes to taste.
