About the Recipe
If you looked at the ingredient list and pulled a face when you saw 'cottage cheese' I totally understand as I was more than skeptical when I came across the recipe. However, don't be afraid, these pancakes are beyond delicious and not a hint of cottage cheese. I am not entirely sure why it's been added apart from the obvious extra protein but here we are. This recipe has been slightly adapted from the original which is Dr. Stacy Sims version and can be found on her site, make sure you check hers out also! I will make these again and urge you not to be put off. I think they would go well with any toppings, be a daredevil and try them!

Ingredients
1 cup of oats
1 cup of low fat cottage cheese
1/2 cup of egg whites
1/4 cup of oat milk
2 Tsp of baking powder
2 Tsp of vanilla extract
1 Tsp of cinnamon
1 Tsp of date syrup (optional)
1/3 cup of greek yogurt
Handful of strawberries and blueberries
Preparation
Step 1
Place all of the ingredients into a high speed blender apart from the yogurt, strawberries, blueberries and date syrup
Step 2
Pour mixture into a hot pan thats been coated with a bit of oil, you can make your pancakes as big or small as you like, but cook them on one side then flip and cook on the other side
Step 3
When thoroughly cooked top with the yogurt, strawberries, blackberries and drizzle with date syrup, enjoy!
