Homemade Leek And Potato Soup

About the Recipe

Delicious, warming and hearty bowl of homemade soup, what's not to love!

Ingredients

1 bag of potatoes, I like red skinned for this recipe


Bag of leeks, generally around 3 large


Half a red onion or a bunch of spring onions will do


1 vegetable stock cube


Teaspoon of olive oil


Mixed seeds for topping

Preparation

Step1


Wash your potatoes and leeks


Step 2


Chop everything up, I dont peel the potatoes.


Step 3


In your bit of olive oil, heat and add your sliced onion and leeks and let them cook for a few minutes


Step 4


When they are browned, transfer to a large pan, add the potatoes, stock cube and cover with water. Add salt and pepper and bring to a boil and let simmer for 15 - 20 minutes.


Step 5


When the potatoes are cooked and soft enough that a knife easily goes through they are cooked. Blend everything using a hand blender or use another type of blender if you dont have one


Step 6


Spoon into bowls and top with the seed mix. Whilst my kids love this soup they would not thank me for adding the seed mix on top of theirs so I only put it on my own. Let me know what you think? Personally I love it!
