About the Recipe
A dessert that is creamy, sweet and that you can make in less than 5 minutes. I first made this way back in 2015 and it never gets old. You can add spices, fruit or add on top of porridge. The possibilities are endless and it is well worth making. In my humble opinion, this beats the usual custard you would find in a supermarket hands down. Don't just take my word for it, try it yourself and let me know what you think!

Ingredients
1 cup of raw cashew nuts
5 - 6 medjool dates
1 cup of water
1 teaspoon of vanilla extract
Preparation
Step 1
Place the cashew nuts and dates in a bowl and pour over one cup of water, leave these to soak for a couple of hours (make sure you remove the stone from the dates)
Step 2
Place all the ingredients into a blender, including the vanilla extract and blend
Step 3
Chill in the fridge and enjoy. This is delicious with fruit such as strawberries, bananas and peaches. Alternatively you can add the custard on top of overnight oats or chia pudding, delicious!
