Spicy, delicious and vegan, give this a try

Ingredients
Block of firm tofu
Quinoa
Mixed greens
Radish
Carrot
Preparation
Step 1
Remove water from the tofu by placing it on a plate then putting a weight or some plates on top of it to squeeze out the excess water.
Step 2
When the tofu is ready, season with cajon seasoning and slice up and fry in a bit of olive oil until browned and cooked throughout.
Step 3
Slice your carrots and radish, i used a mandolin for the carrots which makes it into ribbons
Step 4
Cook your quinoa according to package directions
Step 5
Place your quinoa on a plate with the quinoa, mixed greens, radish and carrot. I topped mine with a bit of vegan mayo but you can use anything you like. Enjoy!
