About the Recipe
A time saving bowl of deliciousness that everyone will enjoy. The crispy tofu makes this but the umami flavour from the miso will possibly have you going back for seconds. I make this regularly in my house and everyone loves it. What's not to like really though, a delicious meal in 10 minutes, healthier and much better tasting than a takeaway. Let me know if you try it!

Ingredients
Crispy tofu
Miso paste about 2 Tbsp
Soba noodles
Stir fry veg
Chicken stock cube
Coriander
Chilli flakes
Preparation
Step 1
Put your crispy tofu in the oven or cook according to directions
Step 2
Bring 800ml of water to a simmer and add in the chicken stock
Step 3
Put your veg in the pan and allow to cook for a few minutes
Step 4
Spoon the miso paste in a bowl and add a bit of the water from the pan giving it a good whisk till there are no lumps
Step 5
Pour the miso mixture in with the hot stock, stir and add in the noodles
Step 6
When all cooked, noodles should only take a couple a couple of minutes. Spoon into bowls, top with crispy tofu, a few coriander leaves and some chilli flakes, enjoy!
